  • From the Coals – grilled lobster & charred squash “risotto,” kaffir, lemongrass, chile, golden delicious apple, sage

  • The Main Event – apple marinated bulgogi-braised short rib, broccoli, pommes, apple cider tare

  • Orchard Finish – gâteau invisible aux pommes, warm apple “pave”, finished with thyme streusel & malted koji gelato
